It’s a gate valve, it’s suppose to unscrew at the hex on the bonnet that screws into the valve body.

Not the packing nut directly below the handle.

I suggest replacing the gate valve with a ball valve. Gate valves, the gates stick and strip leaving the gate in whatever position it’s in. On/off or anywhere in between.

So I assume I have to use a couple of big pipe wenches ??

Whatever fits best and gives you enough leverage. Back yourself up of you’ll break the copper.

I prefer replacing gate valves.
 
It would be better to use a large adjustable wrench or an open-end wrench on the hex part of the valve. And if you can find a slim one for the flats between the round part of the valve and the valve inlet and outlet. I've made some before as well.

Pipe wrenches can squeeze the soft valve housings.
