What happens to water that gets stuck between tubing for many years?

An example would be if one shuts off two valves and there is a plastic tubing between the two valves and water just gets stuck in there for many years.

Another example would be if there is an osmosis system under the sink that's not being used and has been sitting there for 6 years or longer.

Would the water get contaminated and would the piping eventually develop mold and possibly contaminate the water in your house?

Generally it is not enough to cause issue after being flushed. I have flushed a few systems with chlorine. You could also send a sample for testing. Legionaries could form in stagnate water supply, which is very bad.
