too many elbows?

The shower panel I bought connects to 1/2 inch threads. I put two of these together to get connections where they need to be. My wife thought maybe too many turns would affect the water pressure, or might otherwise be a problem somehow. I think it should be ok? Haven't installed them yet....

I was taught to only use 90s where there wasn't an alternative. We would always try to use 45s instead of 90s. Elbows in general create a restriction of flow and turbulence. What you have in the picture will work but less would be better.

What is the shower panel supplying? # body sprays? # shower heads?

I'm not sure how I would use 45s to get where I'm going, I feel like the pipe needs to come straight out of the backerboard, to minimize the hole in the backerboard

I suppose i could put 45s closer to the floor, and then two 90s at the top. just so that all the bends weren't so close to each other. Would that be worth my trouble at this point?

You will be fine. Your not looking for that great of a volume. 45s won't make that much difference.
