Switching two water heaters and what part of the building they are running.

I have an 80 gallon that runs the bathrooms, showers, etc. and a 50 gallon that runs the kitchen. Our kitchen needs to pull more that it is getting from the 50 and we don't need the 80 gallon running the bathrooms (it is over kill.)

Both units are in the same closet and located directly beside each other. Can I switch the inlets and outlets to allow the kitchen to pull from the 80 gallon without having to change anything else?

You can change the outlets, but I could never imagine needing 80 gallons for a kitchen unless it's a commercial setting.

It is a small scale cafe/snack bar type kitchen that uses a dishwasher a lot and that's where I am seeing the issue.
