Need help locating main water line behind sheet rock

Hi everyone. I am trying to locate a section of water pipe in my garage that feeds all the water into my house to install a electronic water softener. From what I have read, I am supposed to look for the water line going into my gas water heater tank and follow it back from before it splits into the water heater. That's where I would want to wrap the wiring for for the water softener so it treats the water for the entire house. However, the water pipe going into my water heater comes out of my wall with the shutoff valve literally on the sheet rock. I believe I need to cut out some sheet rock near that valve to access 10" inches of pipe to wrap the wiring. I posted a photo with some annotation of where I think the pipe is traveling behind the wall. Any tips would be appreciated on my educated guess.
