Hi, the blue pipe and copper pipe w/ p-trap are copper 1.5" copper pipe. What I need to do is install a sink with a drain and also have the laundry drain into the main stack.

I guess my question would be. Should I remove the blue pipe as far as I can get into the ceiling and install bigger stack 8" and then have a Y adapter for the Sink and washer machine?

The other copper drain/vent would also need to connect to the stack.

what connections to I need to convert the copper to a new 8" main stack?

There is no 8" pipe anywhere in that picture. Did you mean 3"?

Do yourself a favor and get rid of every bit of copper drain and vent pipe that you can. If you don't, you will have to do it later.

You will want to cut the cast iron off just below the hub, and use a transition band to convert to PVC.

Honestly, unless you are really handy and already have a bunch of tools, you would probably be ahead to have a plumber do this for you.
