I am replacing a kitchen sink faucet. I bought a faucet with a sprayer which I can't use. My question if I installed the faucet will the sprayer hose leak when I turn the water on?

Your question is not clear. Pics and better explanation would help.

I would not recommend it but if you’re desperate, you could hook up the hose and leave it under the sink. I would definitely put a piece of wood between the trigger and the housing and tape it there so it can never be accidentally triggered on.

I just installed a Moen 2 handle kitchen faucet with spray. She didn't want the spray. In the
box it came with a plug that snapped into the connection where the spray hose connected too.

The older delta faucet you could do that now most are plastic quick connects if it is brass like the above poster mentioned your good
Delta makes caps for their faucet side spray outlets.

They make two different quick connect styles.

They also make a blue one they call a cap but it’s really a plug.
