How to install and align the water supply valve correctly

I wonder how do you install the water supply valve on the iron pipe, so you align it the way you want? (For example the handle facing north, not north east) Do you use the plumbers tape to regulate the turn?
I noticed that it is either not enough or too much turn.
Will the tape seal it completely although i don't have the it turned all the way?
Do i need to use pipe dope in addition to take to provide proper seal?

its not the tape or dope that seals it, its the thread angle of engagement, you get it right by doing as john has said and not overtightening, that being said Black iron is malleablle and you can usually get another turn but be carefull, too much twisting will split the fitting and especially with brass.

just remember that a pop bottle can easilly hold 80 psi, and you arnt dealing with those pressures likely. and that its not how tight you wrench it, but that you do it properly. \
