FOR SIZING STORAGE WATER HEATER,
WHAT IS THE HOT WATER DEMAND FOR COMMERCIAL KITCHEN SINK
WHERE CAN I LOOK UP FOR IT??????

I see commercial faucets spec'ed at ~2 gpm, so you can start with that. If you just turn on the hot water and let it run for as long as you're standing at the sink, like any woman from California does, you'll need ~120 gph of hot water.
 
your local plumbing code should have factor values....in the glossary should be under water distribution systems this table tells you what size pipe for different fixtures
