Can I place two hammer arrestors in the locations marked in red for the whole run? Main is 2"

Can you, definitely yes. Will it stop water hammer? That depends on pipe lengths, instantaneous flow rates, and the size of the arrestors.

You should either get an engineer to spec for you or contact Sioux Chief and talk to cust. serv.
For 2", I'd guess a MegaRestor. I've done lots of two inch water in commercial buildings and not needed arrestors.
