Ok. I think I know what y'all's answer will be, but I'm gonna ask anyway. Please tell me that I will be ok with 3/8" fall on a 10' section of 3" line going into septic tank.
Also, when installing 3/8" cutoff valve with escutcheon, how do you tighten valve, because the male adapter is hidden behind escutcheon preventing holding it while tightening.
 
You need to know what your code calls for as far as the pitch goes, 3/8" should be more than fine. I dont know what your talking about as far as the 3/8" stop. They do make split ring escutcheons if that will help you. They are meant to go on after the stop is on the pipe
 
3/8” fall over 10’ is basically flat. 3/8” per ft would be more than enough.

Take a pic of your stop valve issue, not sure what you’re talking about.

Copper pipe is stout enough to thread a stop valve on without twisting. Just to t kill it, just get it snug. Use a little Teflon and then a little pipe dope on the Teflon. Bam you’re done.
