Commercial tank requirements

I have a regular septic tank I believe it's 1000 gal. I was wanting to add a very small bldg that would be used to prepare some food for a food truck. No frying. The health dept says it needs to be inspected ad a commercial kitchen. All I'm adding is a 3 compartment sink, a hand sink,a mop sink. Before I spend 300 dollars on a inspection. Would my existing tank work to tap into. ?

You’ll need a grease trap. Your question should be directed to the authority having jurisdiction

Ok, that’s different than most places.

And that proves the point that your questions should be directed to the health department.
