Water supply from meter to house in CA - best DIY method

I am considering a DIY to replace my 38 yr old polyB line that now leaks at the riser to the house. Will get some help digging the trench. I have minimal experience soldering copper, but have done lots of small homeowner plumbing repairs, faucet installs, etc.

Info:
1) 23 ft from meter to house, needs to go under 1 sidewalk.
2) currently have 1-1/4" copper tube as riser from ground to house.
3) meter says 1" and exit pipe is 14" below ground

Questions:
1) what pipe material do you recommend as overall best for foolproof installation and long life?
2) how to connect that pipe at 1-1/4" copper tube riser and valve at meter?
3) Is there any practical benefit to having 1-1/4" size run? I ask this because meter is 1" nominal size, the 1-1/4" riser tees to a 1" and that is what supplies the house interior. We have plenty of flow at all outlets in the 2 story 3 bath home. both pics.PNG
