Water heater settings when water turned off in house

A rental property that we own is currently vacant. We turned the water off at the main and turned on each faucet to drain any remaining water out for peace of mind since it is cold outside. We left the heat on at 60 degrees and installed a freeze alarm which will alert us if temperatures dip down to 55 degrees or lower. I am just not sure what to do with the gas water heater. Should we turn the dial on the gas water heater to pilot or vacation mode? What is the difference between these two settings? Could the gas water heater be damaged if we keep it on pilot or vacation mode for a month or so with the water off? There isn't an easy way to drain the water heater because of its location so I really don't want to mess with turning it off completely. This is a gas water heater and the manufacturer is Lokinvar. Thanks.
