Just moved into a new apartment & kitchen faucet is threaded at the end (looks like it's meant to fit into a head/attachment). I've been searching online & can't really find what options I have for this. We would love to just attach a hose/sprayer - is this possible without having to install a whole new faucet?

Can't see it from here. You get enough J B weld epoxy putty you can do just about do anything your imagination leads you to.
