Grease Interceptor (aka Large Sized Grease Trap):

CS City Requirements1 - Avoids Investigations/Citations/Fines: Keep 3 Mandated Maint Logs On Site, Of:
1. Monthly OUTSIDE Of Trap Inspection, Verifying If An Inside Clean Out Is Not Yet Needed.
Remove Cover, Looking For Telltale Thick F.O.G. Capping. Optional Method: Use Measuring Dipstick2.
2. Used Fryer Oil Disposal Method(Shows Was Not Dumped In Sewer Line Or On City Land).
See/Print City Man. p21 #3 “OUTSIDE Grease Trap/Interceptor & USED FRYER OIL Maintenance Log”.
3. Cleaning Out INSIDE Of Trap Is REQUIRED When 25% Of Tank Is Full Of F.O.G. & Solids3:
See/Print p20 #2 “INSIDE Grease Trap & Used Fryer Oil Maintenance Log” & P22 “Pump Procedure”.
TRAP: Required Due To Commercial Kitchens’ Inherent Use Of Sewer System Clogging Waxy: ‘F.O.G.”(Fats, Oils & Grease). Cools & Captures Incidental Floating F.O.G. & Falling Solid Waste(Food Particles Etc.). While Allowing Gray Water To Pass Thru.
Burden Must Be Minimized By Placing Sink Waste Into A Trash Can, Instead Of Down The Drain.
Effectiveness Diminishes @ 25+% Full(Typically Within 4 Months). Requiring Emptying-Cleaning Out.
This Building’s Plumbing Design, Only: Dishwasher, Tri-Sink, Large Deep Sink & Small Hand Wash Sink Drain Into This Trap-Inlet. The Outlet Water Travels Into The Bldg. Crawl Space Main Sewer Line.

BASIC TROUBLE SHOOTING CHART(Often Because It’s Time for A Trap Emptying Clean-Out):
SYMPTOM:
LIKELY CAUSE:
Grease Trap Top Cover Is Overflowing-Leaking.
The Internal Baffle OR Outlet Line From The Trap Is Obstructed.
Sinks Connected To Grease Trap Are Not Draining/Draining Slowly.
Obstructed/Partially Obstructed Trap: Inlet Line OR Outlet
Line-If Trap’s Cover Is Sealed Well Enough To Prevent Overflow.
Sinks & Toilets Are Not Draining.
Obstruction In Sewer Mainline.
Foul Odor-At Grease Trap.
Trap’s Cover/Seal Is Not Secured. Grease Is Old-Fermented.
Foul Odor-In Bldg/
Tank Clogged/Missing Internal Baffle/Part.
Grease Trap Is 25+% Full. Greasy Water Is Being Released.
1 Cup Bleach Down A Bar Sink Might Reduce Odor Temporarily.
