I am about to install this Sanifolow rear dischage toilet once I have leveled the floor and installed tile. I'm concerned about wastewater coming in through the rear of the toilet and contaminating the water in the wier. I have not been able to find a lot of information on roughing in rear discharge toilets, I found a few that said installing on a horizontal stack is acceptable. But haven't been able to find any real documentation.

That toilet is specifically designed to be used with the Saniflow macerating tank and pump, NOT for your application.
There are floor mounted rear discharge WCs from a few major mfrs, that is what can be used.
In Europe and some other countries they do rear discharge similar to what you are thinking, but no fittings in USA
