I'm going to replace the pressure switch on my well system. My question is: should I use a brass or a galvanized nipple? Are there reasons one way or the other. And how long should it be? Does that matter? Thanks for your help.

Never use a galvanized nipple for the pressure switch. They will clog up on you. Use brass or Stainless. A 1/4" X 3" is very common. But it can be longer or shorter if needed.
