Stub out question

Should end in the wall, then mounted and secured within wall and stubbed out with shut off.
 
This is what I use. You might want to consider it. Then use a 5/8" X 3/8" compression valveapollo-elbows-apxstub8we-64_400_compressed.jpg
 
The pex will look like crap stubbed out all crooked. Use the copper stub out picture above and put a compression stop on it. You just nail it to a stud and crimp the pex to the top of it. Then cut it off where ever you want and put the stop
