Single Basin Sink with Garbage Disposal

Recently installed new granite composite single Basin Sink in kitchen. I've very little plumbing experience. We ran into an obstacle. Our disposal is too big and now will not connect due to obstruction by water supply valve. I have an idea which may be an easy fix but just want to know if my idea is feasible or commonplace...

Could I uninstall the sink, flip it around, and reinstall with the drain towards the front of the sink cutout? It'll easily clear the water supply valve. Looks like I'll just have to reroute PVC with new disposal location.

Would this work? If not, what's best way forward? Thanks for taking time to read and respond!
 
Here are a few. Hopefully they help. We also have tried to find smaller disposals but they all look too big.

Contacted countertop people who made cutout and sold us the sink. Apparently the back is 2 inches wider than front, so they didn't think it would work. I guess next route is to try to shorten or lower supply valve. Do any pros know approximately how expensive that is?
 
Is the back drywall? If so just cut it out and move the supply. A few hundred dollars for a plumber is better then a backwards sink
 
Just curiosity: Where does the copper pipe - running exposed, close to the wall - go to?
 
It's fixed! Plumber came yesterday, and it was easier than I had thought. He attached a 90 which just rotated the supply valve knob enough for the disposal to fit.

The other pipe goes out to the water hose on the front porch, I believe.
 
Just when I came up with an alternative fix...
Which was don't use the Badger 5 disposer, instead use the shorter (?) Insinkerator Evolution "Compact".
But: All's well that ends well
