I'd like to connect this stainless hose faucet with 5/8" ID threaded male to the 1/2" ID copper water pipe. A dielectric union which threads onto the stainless with a female end, and then sauter onto the copper with a female slip is what I first thought, but the gap between the two is fairly large, plus I have to account for the size reduction in some way.

Anybody done something similair and can advise?

You need a 1/2” Copper FIP adapter, 1/2” copper pipe, 1/2” copper coupling.

Use the 1/2” copper coupling and pipe to extend the cut copper you have.

Use the 1/2” fip copper adapter to solder onto the copper you extended from the valve. This will allow you to screw your hose faucet into the fip adapter.
