Need help changing anode rod

The person who plumbed in our water heater soldered the copper plumbing connections. The anode rod is located under the hot water pipe, but the copper nut and pipe are soldered together and therefore I can not get to the anode rod (pictures attached). Since it is a gas water heater I am concerned about breaking out the torch to try and melt it.

How the heck do I get this thing out? Maybe cut the pipe and solder a new copper sleeve over top? Should I be worried about using a torch around the water heater?? Obviously, I would shut off the gas supply - but not sure if it is even safe.

Cut the pipe unscrew the nipple install the new anode rod screw the nipple back in and then solder the copper back together with a slip coupling
