What tools/methods would you break out to remove this effing thing? Feel free to think extreme.

A dremel tool, face shield. Cut through the nut on each side then pry it with a screwdriver to pop the two halves off.

Or maybe a vibrating multitool with a carbide tipped metal cutting blade. Either way tiny sharp metal shards are going to rain down in your face. Not what you want in your eyes or up your nose.

Have you tried heating the nut with a torch? Looks like there is room for it. That might be enough to break it free so that you can spin it off with a basin wrench. Then you won't have to cut.

How much of that tube sticks up above the sink? In this one case it looks like maybe it could be unscrewed with a really large pipe wrench from the top. The plate would rotate at first, but then it is going to hit the back of the sink and won't be able to go any further. If there is already a strip of metal taped on there it might not even ding the back of the sink.
