Hook up water filtration cooler using a "tee" under the sink?

Hello all. As the title says. I would like to hook up a water cooler in a commercial office. Easy hook up. Disconnect the cold water line, install the tee, and tighten it up. Question is whether you need a plumbing license or not? I wouldn't think so as this is all after the shut off valve. Just want to be sure. Thanks in advance! Technically everything has to have its own stop valve.
 
Technically, you should connect the tee directly to the water line before the faucet feed with it's own shut off.

Plumber or not is up to your local jurisdiction, mine requires one to cut into water, drainage or gas.

That aside, it likely won't be a problem unless you run both faucet and cooler simultaneously.
