help with 3/8 shut off valve please

ok the water comes in under the sink in a 1/2 copper pipe, and terminates in 3/8 fitting to accept a 3/8 pex line up to the 1/2 inch faucet...

I want replace the plex line line with a stainless 12 inch stainless steel hose, and insert a straight shut off valve between the inlet and the flex hose.

I don't want to disturb the existing 3/8 outlet to which the existing plex line is attached

ok question: what kind of shut off valve do I need that has an INLET that will attach to the existing 3/8 outlet ?

Or do I need some kind of adapter ? Thanks ..Alan...

Turn the water off, drain the plumbing in the house, open faucets to help drain.

Cut that fitting off nice and straight with a hack saw, no burrs on the cut edge.

Install the angled compression shutoff valve as Geofd described.
