Can you make your own pex supply line?

I was reading a plumbing article earlier today and it had this photo in it. It looks as if it’s a pex supply line with a push fitting at the end. Are these type of supply lines allowed? I’m curious because I can no longer purchase the hand tight only sink supply lines at my local hardware store anymore and this could be a simple alternative.

Those push on fittings are used on some water coolers they leak if they are touched if one push fitting leakes in the water cooler we chage it all out to soft roll copper and compression fittings
 
I am looking at that funky overflow system.

I have never seen that before.
We have those at work they came in a prefabbed multi lav counter top overflow part on the drain is fine but the part that is fixed to the sink
was caulked .......junk they fall out we are stuck with them so we cut small peices of 1/2" copperthe sits against the lav frame and the over flow and was recaulcked the way it is now it wont come out
