Do you mean the grey rubber ring in this pic? It seems contoured to seal against the ball in the other picture and to provide friction against the ball to keep the head in position.

I'm not sure about the orientation of things but can you get in with some type of cold chisel/punch to tap (parallel to the countertop) on one of those nut "ears"?

I have an old under-sink sweated shutoff that says Eastern on the handle. The washer is evidently gone as it will not shut off water flow. I'm concerned about sweating on a new valve as the previous owner put a lot of spray foam insulation around it which I think is quite flammable...

I'm plumbing an ABS shower drain and have seen p-traps with unions and also p-traps that use a hard-connected street el on the output side. It seems to me the trap with union might make the installation a bit easier, but are there other reasons to choose one over the other?

I was also having a problem removing a Moen cartridge so I made a little tool out of a 1" copper elbow. You can see how it is cut from the pic. A dowel in the uncut end allowed me to twist the cartridge and the bevels in the brass body effectively lever it out.

I looked more closely and the tub has feet that are secured by screws from under the sub floor.
