I am looking to be the project manager for my own bathroom renovation and would like to know who should I be hiring to build the shower base, framing, waterproofing and drain installation. Is it the carpenter, plumber or both need to work together?
 
Sounds like he wants to be the GC.
You can save money doing that if you are knowledgeable enough about required and the timing and able to get the various trades when required.
But it could end up costing more, also.
It would be a good learning experience but it sounds like he would know where to start.
On the other hand, contact the different trades and ask them what they require.

sheet rocker installs dura rock/ cement backer board
tile setter water proofs it
