Floor sink, flow control, and grease trap

I have a three compartment dish sink and a single compartment prep sink that are required to be connected via an indirect waste into a grease receptor. What is preferred way to install the floor sink to the grease interceptor using the flow control? Can the flow control be installed below grade if access is provided? Thanks!
 
yes we have that exact piping in our kitchens at work piping is buried diamond plate over the grease trap then the grease trap and flow control in the pit
our 3 bay sinks connect directly to the grease traps...we use (plastic)?? grease traps they wont rot out from sitting on the floor ….you would have to go by YOUR states plumbing code
