Restaurant's dishwasher supply water not hot enough

Hi everyone,

My friend has a small restaurant and has problems with his dishwasher water temperature. His water heater tank was not sufficient to handle every day operations, so he bought and installed a second heater tank dedicated to his dishwasher. Now the hot water capacity is ok, but the water is not hot enough to handle a restaurant's dishwashing needs. Considering the heater maxes out at 150F and for the dishwasher to be able to do its job correctly, the water temperature should be at arround 180F, would there be out there a secondary electrical heater device to compensate for the extra 30F degrees on demand? This device would have to be small since there is not a lot of room left to work with. Note that this plumbing portion is made out of PEX, if it matters.

He needs a commercial dishwasher that heats the hot water above the supply temperature and it would also have a cold water connection at the discharge for tempering down the water to cool it for the drainage system.

He does have 2 commercial dishwashers that heat the water to 180F, but they now rest in the shed because he had too many leaking problems with them.

He decided to buy another kind of commercial dishwasher (see the picture) to answer his needs, more easily repairable due to its configuration. It does to some extents but some needs are yet to be fulfilled. That's why an on demand device, that could be powered on only in those cases (for example: washing glasses), would be nice to have. Any devices like that you would know about?

You can be sure i will tell him about your advice to supply cold water to the discharge for tempering down the drainage water temperature.

the water coming from your water heater is only 140 degrees due to scalding, it can not be hotter.

so you have to buy a booster heater for the dishwasher. the health department will place a cup. in a trey,run it thru the dishwasher
then put a thermomenter in the cup..to check the temp.
