Ice maker supply

Code calls (I have read) for the refrigerator ice maker supply to be no more than 18" off the floor (I am not a professional).

Can anyone explain why as one must bend (contortion) one's self to reach the shut-off valve when the refrigerator is pulled out?

cause the water hooks up low? dam if i know. uniformity?
I am a radical, I will install a duel filter with bypass at 5' so fast it will make your head swim
will not give it a second thought.

I have no idea. Was told by a plumber (MD) that it was code, no higher than 18".
