Whoever put on the previous tub spout soldered a coupling onto the existing pipe to extend it since it was way too short. Removing the spout also removed the pipe back to the coupling. So now I have a coupling about 1 1/2" out from the wall, which has an acrylic surround, that I need to extend a few inches for a new tub spout. Any advice on soldering a new pipe into an existing fitting that's very close to a plastic surface? Is it a hopeless situation?

1-1/2" is more than enough to solder on a 1/2" coupling.

Protect the tub from any solder that might drip while soldering.

You don't need a very hot flame to solder 1/2"

You can protect the wall with Heat barrier like Cool Gel

But you really don't need it if you're careful.

look insde the hole in the wall and see if you can see a threaded adapter that the copper pipe is soldered into.
Or is the pipe soldered into a 90 fitting.

If there is a threaded adapter you can use a socket wrench to remove it.

Usually there is a fitting similar to this brass fitting for the shower head and the tub spout. and that fitting is usually secured to a strap or wood so you don't twist the vertical pipe coming from the valve.
