I like the look but are they practical? I heard the exposed porcelain leaves more area for chipping.

Is using a vessel sink practical on a day to day basis? Is water splashing all over the counters an issue?

Personally, I don't care for the look of vessel sinks. But I think the splashing issue would more depend on the water output, and angle of the faucet you choose.
 
Seems for awhile, vessel sinks were the latest trend, but it has died quickly in my opinion. I'd never install one personally.
