I will be replacing the galvanized pipe from my water heater with the flex copper pipe. Any install advice?

Any tips installation wise?

I know, I'll be cutting off water. Do, I have to shut off gas? I wouldn't think so

Do I have to drain?

Not the entire heater, no. Just drain the pressure off before unhooking or cutting anything. If your water piping is ran overhead, drain as much as possible out by opening all of the faucets and shower valves at the same time.
