Remove the valves and pipe from the tees. The compression fittings that are used on steel pipe are sealed with rubber gaskets that will not standup to temperatures of a hot water system.

That line is 3/4" not 1". Depending on the BTU'S needed for all the appliances 3/4" may be to small.

Not good at all. Flue pipe not connected properly, cpvc adapters connected directly to water heater. Turn the gas off to the heater that flue pipe connection is very dangerous.

The round sleeve unscrews. The nut to remove the stem is behind it. You will need a deep socket to get at the nut. I think it's a Sayco faucet.

I would say they have no idea what there doing. The instructions from Moen say to not use CPVC or Pex on the tub spout. That is not a tight space. Any PLUMBER could solder joints there.
