Replumb job
What would you use in Houston Texas to do a re-plumb in a 60's home?

Water Service -- PVC / Water Lines -- CPVC / DWV(drain, waste, vent) PVC or ABS. The reason for all plastic is you are in a southern costal area and cpvc cost less than copper. You could go with a copper water service & water lines it's more costly.

Or pex could also be an option for water lines. But totally agree with the plastics either way.
