Default point of use - inline - Undersink WH intall

I am installing a 2.5 gal 110v point of use, inline WH under my kitchen sink.

Installation is very straight forward, Hook it up and plug it in.

But, the supplied install guide says to simply plumb the included PT valve to an open drain.

I obviously do not have an open drain under my kitchen sink?

As the Kitchen is on the second floor, I would also like to install a WH pan that drains.

Can someone give me suggestions on have they have installed these in the past and plumbed the PT drain?
